The difference lies in how the contents of the mods affect Terraria. Thorium fleshes out the vanilla game while Calamity makes Terraria a much more different game.

Thorium adds more than 1,900 items in Terraria. Among those are 55 new armors, 180 new enemies and banners, 150 new titles, blocks, furniture, and ten new town NPCs. By adding the mod, you will also meet 11 new bosses and explore a new biome: the Aquatic Depths. Moreover, you’ll have three more job classes, namely the thrower, the bard, and the healer.

However, while there is this much of an addition, Thorium will not change the feel of the game. Sure, the final boss of Thorium will be a lot more challenging, but it will still feel like you’re playing the same game. Calamity reimagines Terraria as more boss fight-oriented with some resource collecting to make you more powerful.

All in all, if you want to expand the content of Terraria without losing the core of the game, Thorium is highly recommended. The mod is also very polished and would fit for someone just beginning their modded adventures.
